Here’s How To Make Fragrant Chicken Rendang That’s Perfect For Hari Raya Celebration

As you all know recently, there was a huge rendang controversy caused by Master Chef UK judge who commented that chicken rendang should have crispy skin, which enraged the entire country of Malaysia, Singapore, and Indonesia which then turned the incident into a social media warfare. Today, we have just the perfect chicken rendang recipe for you to make on Hari Raya!
Here’s A Recipe To Make Authentic Chicken Rendang!
Chicken rendang is slow-cooked and stewed in the rendang sauce and this chicken rendang recipe yields flavorful and tender chicken, with a burst of flavors alongside the intense aroma of the exotic spices. Now, you can just recreate the compulsory Hari Raya dish at home by following this chicken rendang recipe.
Ingredients (A)
Onions
Ginger
Galangal
Garlic
Lemongrass
Turmeric
Ingredients (B)
Half-Chicken
Dried Chilies (15 stems)
Meat Spice (1 Tablespoon)
Chili Spice (1 Tablespoon)
Turmeric Leaf
Asam Keping Kerisik (2 Tablespoons)
Coconut Milk (1 Box)
Palm Sugar (1 Tablespoon)
Sugar (2 Tablespoons)
Water (2 Cups)
Step 1: Blend all the ingredients (A), filter, and set the mixture aside.
Step 2: Blend the dried chili, set it aside.
Step 3: Heat up the oil in a pan. Saute the mixture (A), chili spice, and meat spice over low heat until aromatic.
Step 4: Add in the dried chili mixture and turmeric leaf. Wait for the sauce to cook and for the oil to separate.
Step 5: Add asam keping, kerisik, chicken coconut milk, palm sugar, and sugar. Add water from time to time when the stew is about to dry. Finally, simmer at least for an hour until the stew is dark and top off with some torn turmeric leaf.
Additional info, always mix the rendang thoroughly so it won’t dry up.
