Sugar (150g)
Tapioca flour (250g)
Corn flour or plain flour is also worked with this recipe, but corn flour is crunchier (30g)

Salt (1/2 tsp)

Step 1: In a medium bowl, mix sugar, salt and baking powder together. Add flour and mix well until a dough forms.

Step 2: Divide dough into 2 portions and roll into a 1.5-inch thick log shape. Cut into 1-inch size pieces and roll into a ball.

Step 3: Heat the cooking oil using medium heat until hot. Fry the pandan leaves until fragrant then remove them.

Step 4: Add sweet potato and fry them until brown. Gently press the balls with a utensil to expand the balls and increase the external crunch. Ready to serve!
