Ice Nestum Biscuit: A Step-By-Step Guide To Whip Up Nestum Biscuit With Meringue Topping At Home

Raya will be upon us soon! And it’s the perfect time to bake-up some Raya cookies for a little festive cheer. So far, we’ve filled up our home with the aroma of honey butter Cornflakes, chocolate chip cookies, and other delicious Raya goodies. Since we’re on a roll, we’re back to try another Raya cookie recipe that’s new on our radar.

Try Out This Ice Nestum Biscuit Recipe At Home!

If you’re looking to treat yourself to something delicious, why not make these yummy Ice Nestum Biscuits? Featuring pretty straightforward ingredients, you’ll have this sweet Kuih Raya ready for Hari Raya celebration!

Ingredients (Base Biscuit):
Butter (250 gm)
Caster Sugar (90 gm)
Egg Yolk (1)
Vanilla Essence (1 Teaspoon)
Nestum-fine blend (100 gm)
Wheat Flour (300 gm)
Cornstarch (1 Tablespoon)

Ingredients (Meringue/Topping):
Egg White (100 ml)
Icing Sugar-sieved (300 gm)
Cornstarch ( 1 Tablespoon)

Step 1: Combine wheat flour, cornstarch, and fine-grained Nestum. Set aside.

Step 2: Using a mixer, beat butter, and sugar thoroughly. Add the vanilla and egg yolk, and mix again.

Step 3: Put the flour mixture in the dough. Mix until the dough is solid enough to mould.

Step 4: Flat and mold using a 20 cent coin size mold until the batter is completely done.

Step 5: Meanwhile in a separate bowl beat eggs to soft peaks. Add icing sugar and beat until fluffy. Add the cornstarch and beat until thickened (the dough will not fall if the mixer bowl is turned upside down).

Step 6: Provide plastic and round nozzles for piping biscuit topping. Pipe the meringue mixture over the cookie dough until completely done.

Step 7: Bake at 150 degrees for 30-45 minutes depending on the oven. Make sure the meringue/toppings are crunchy. Ready to be served.
