When it comes to Hong Kong-style pastries, the first thing that pops up in mind is either Egg Tarts or Pineapple Buns. Be it at a Dim Sum spot or a Cha Chaan Teng, these two pastries are always top on the list. While Egg Tarts are more often associated with tea time, Pineapple Buns are great during any time of the day! Without further ado, shall we take a lot at the ingredients you need?
Ingredients (A) – Dough
- 250g bread flour
- 35g sugar
- 3g yeast
- 1 egg
- 110g milk
- 20g butter
- 1g salt
Ingredients (B) – Crust
- 65g cake flour
- 30g milk powder
- 50g butter
- 35g sugar
- 15g beaten eggs
Step 1: Begin by softening the butter to room temperature and warm the milk.
Step 2: In a bowl, add in bread flour, sugar, yeast, salt, egg and warm milk from Ingredient A. Stir to combine and knead to form a dough.
Step 3: Add softened butter to the dough and continue to knead until smooth. Set aside and let it rise until the dough is 2 times bigger.
Step 4: Meanwhile, prepare the crust by mixing together softened butter and sugar. Add in eggs, cake flour and milk powder. Stir together until the dough is not sticky and store in the fridge for 10 minutes.
Step 5: After rising the dough, cut into small pieces and set aside.
Step 6: Remove the crust from the fridge and cut it into small pieces that are similar to the dough.
Step 7: Place the crust on a non-stick surface and cover with a layer of plastic wrap. Use a rolling pin to flatten the crust. Then, place the flatten crust on top of the dough.
Step 8: Place the buns on a lined baking pan and rise until they are 2 times bigger. Then, brush with egg wash and place it into the oven to bake at 180°C for 20 minutes.
